Tomato Egg Soup

Ingredients: (Serves 2)


1/2 cup Water
1 cup Tomato Juice
1 tbsp Sugar
1/2 cup Milk (or Soy Milk)
1 Consomme Cube
2 Eggs
Dash of Salt and Pepper


Directions:


1) Pour water into pot and heat.  Add tomato and consomme cube.  If the tomato juice you are using is not sweet, add sugar.




2) Crack two eggs into a bowl and whisk, breaking the yolk.



3) Once all is mixed in well, lower heat and add milk.



4) Add egg into pot and give it a mix.



5) Add salt and pepper for flavoring and serve!



* You can substitute consomme cube for 1/2 cup of chicken broth.  If you are using chicken broth, do not add 1/2 cup of water.

* Try adding boiled pasta or udon for further yummy-ness!
